At a Glance: The No. 1 processing cherry on the market, Montmorency produces plump, round red fruits with yellow flesh and clear juice. The highly acidic flavor of Montmorency holds up well to cooking. Like other tarts, this cherry is self-fruiting. The tree is early bearing and a heavy producer. 


Mazzard: This is the most popular cherry rootstock grown in North America. It is generally more vigorous than Mahaleb, especially in poorer soils. This rootstock is somewhat dwarfing, cold hardy and precocious. Deep rooted. Not recommended for heavy soils or areas with high water tables.
